You know those nights after you’ve come home following a long day and the last thing you want to do is cook a big meal, but you don’t want to order in either?
Chances are, you have enough food items hiding in your kitchen to quickly prepare a meal that will convince anyone you planned it ahead of time.
I am the queen of doing this. I became queen by doing a couple things: working long hours and being (mostly) single in my twenties. Ha! All you need is a little creativity and some trial and error.
One of my favorite easy meal methods involves using a salad kit. They’re becoming ever more varied since people love grab-and-go options.
I really like the Asian style kit, which includes the cabbage salad (cabbage, carrots, celery green onions and cilantro), sliced almonds and crispy wonton noodles.
It’s fine by itself, but adding a few extra ingredients makes a great meal instead of just a good side salad!
Here’s what you’ll need:
1 Asian style salad kit
1½ cups precooked chicken
4 oz angel hair pasta
2 tbsp soy sauce
1 tbsp white wine vinegar
Here’s how you do it:
Cook angel hair pasta according to package directions.
Stir salad dressing in with the noodles. Cool in fridge for about 10 minutes.
Mix together soy sauce and white wine vinegar.
Dump the salad into a bowl and stir in sauce.
Combine noodles and salad, then add chicken, almonds and wontons.
Toss!
I didn’t think of it while preparing this particular meal, but I bet adding mandarin orange slices would also be delicious. Ah well, next time!
